Great idea for turkey leftovers!
Indulging in leftover Thanksgiving turkey is a tradition for many. This year we are bringing you a tasty recipe featuring SCHAR Artisan Baker Multigrain Bread, our homemade cranberry sauce and yummy avocado. This Leftover Turkey Avocado Cranberry Sandwich will be a sure hit with the whole family!
For the Cranberry Sauce
1 pound fresh cranberries, rinsed and patted dry
Zest of 1 orange
1 cup chopped orange
1½ cups sugar
¼ cup water
¼ teaspoon ground cinnamon
¼ teaspoon nutmeg
For the Sandwich
8 pieces SCHAR Artisan Baker Multigrain Bread
8 slices turkey breast
4 slices Havarti cheese
1 avocado, skin and seed removed, cut into 16 thin slices
2 cups arugula
To make the cranberry sauce, in a medium-sized pot set over medium heat, combine the cranberries, orange zest, orange pieces, sugar and water. Bring the mixture to boil, then reduce heat to medium-low.
Add in the cinnamon and nutmeg and cook, stirring occasionally, for 10 to 12 minutes until the cranberries are soft. Cool completely and then refrigerate for at least 1 hour.
To assemble the sandwiches, spread one side of each piece of bread with the cranberry sauce.
Place 2 pieces of turkey and 1 piece of Havarti cheese on top of 4 slices of bread. On top of the turkey and cheese, place 4 thin slices of avocado and a handful of arugula. Top sandwiches with remaining bread slices.
